If you want the absolute best performance, you might want to see if you can use the tablet without installing the Google Play services, maybe before you get around to installing it. You can also track down the separate APKs needed to install the Google services too if you want to do it manually or you don't have a PC.

The only reason you would want to "jailbreak" the device is if you wanted to completely replace Fire OS with some stock Android OS, but I don't think there's a working replacement yet.
I don't believe there are any methods of jailbreaking the device currently because it's new, unless someone on XDA figured it out. Yeah, a Fire tablet should work fine for those activities.
